Ingredients
- 4 medium zucchini, spiralized
- 2 carrots, 1 bell pepper, 1 cup broccoli florets, snap peas
- 3 garlic cloves, 1 tbsp ginger
- 3 tbsp low-sodium soy sauce or tamari, 1 tbsp sesame oil, 1 tsp honey or date syrup
- 1 (15 oz) can chickpeas or baked tofu cubes, toasted sesame seeds
- Green onions and chili flakes
Instructions
- 1Prep all vegetables. Mix sauce ingredients.
- 2Heat sesame oil in large wok or skillet. Stir fry garlic, ginger, and harder veggies 3-4 min.
- 3Add remaining vegetables, chickpeas/tofu, and sauce. Cook 3-4 min. Toss in zucchini noodles last 1-2 min (do not overcook). Garnish with green onions and seeds.
