Ingredients
- 2 medium zucchini, sliced into half-moons
- 14 oz firm tofu, pressed and cubed
- 1 red bell pepper, sliced
- 4 garlic cloves, 1-inch ginger, minced
- 3 tbsp soy sauce or tamari, 1 tbsp rice vinegar, 1 tsp sesame oil, 1 tsp maple syrup
- 2 tbsp neutral oil, sesame seeds, scallions
Instructions
- 1Pan-fry tofu cubes in oil until golden and crispy; set aside.
- 2Stir-fry garlic and ginger 30 seconds. Add zucchini and bell pepper; cook on high heat 4-5 minutes.
- 3Return tofu. Add sauce mixture and toss 2-3 minutes until glazed. Garnish with scallions and sesame seeds. Serve over rice.
