Ingredients
- 2 medium zucchini, thinly sliced
- 2 medium potatoes, thinly sliced
- 8 eggs
- 1 onion, thinly sliced
- 2 garlic cloves
- ½ cup crumbled feta or grated cheese
- 3 tbsp olive oil, oregano, salt, pepper
Instructions
- 1Sauté onion and potatoes in olive oil until potatoes start to soften. Add zucchini and garlic; cook 5 minutes.
