Ingredients
  • 8 large ripe tomatoes
  • 1 cup cooked green lentils
  • 2 medium zucchini, diced small
  • 1 onion, 2 garlic cloves
  • ½ cup cooked quinoa or rice

Instructions
  1. 1Cut tops off tomatoes and scoop out pulp (chop pulp).
  2. 2Sauté onion, garlic, zucchini, and chopped tomato pulp. Mix with lentils, quinoa, herbs, and seasoning.
