Zucchini and Lentil Stuffed Tomatoes (Mediterranean) — a healthy vegetarian halal recipe with 240 calories and 12g protein per serving.
Ingredients
- 8 large ripe tomatoes
- 1 cup cooked green lentils
- 2 medium zucchini, diced small
- 1 onion, 2 garlic cloves
- ½ cup cooked quinoa or rice
- 2 tbsp olive oil, Italian herbs, salt, pepper
Instructions
- 1Cut tops off tomatoes and scoop out pulp (chop pulp).
- 2Sauté onion, garlic, zucchini, and chopped tomato pulp. Mix with lentils, quinoa, herbs, and seasoning.
- 3Stuff tomatoes, place in baking dish, drizzle with oil. Bake at 375°F for 25-30 minutes until tender.
