Ingredients
- 4 large eggs (or 8 egg whites)
- 4 cups mixed vegetables (broccoli, bell peppers, zucchini, carrots)
- 2 cups baby spinach
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1 tbsp low-sodium soy sauce or tamari
- 1 tbsp sesame oil or olive oil

Instructions
