Ingredients
- 6 large eggs
- 2 cups milk
- 5 cups cubed whole grain bread
- 2 cups chopped spinach or kale
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- ¾ cup crumbled feta cheese
- 1 tsp dried oregano, garlic powder, salt & pepper
Instructions
- 1Preheat oven to 375°F. Grease a 9x13 dish.
- 2Whisk eggs, milk, oregano, garlic powder, salt, and pepper.
- 3Layer bread, veggies, and half the feta in the dish. Pour egg mixture over top and press gently. Top with remaining feta.
- 4Cover and refrigerate 30 minutes (or overnight). Bake 40-50 minutes until puffed and golden.
