Ingredients
  • 6 large eggs
  • 2 cups milk
  • 5 cups cubed whole grain bread
  • 2 cups chopped spinach or kale
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • ¾ cup crumbled feta cheese
  • 1 tsp dried oregano, garlic powder, salt & pepper
Instructions
  1. 1Preheat oven to 375°F. Grease a 9x13 dish.
  2. 2Whisk eggs, milk, oregano, garlic powder, salt, and pepper.
  3. 3Layer bread, veggies, and half the feta in the dish. Pour egg mixture over top and press gently. Top with remaining feta.
  4. 4Cover and refrigerate 30 minutes (or overnight). Bake 40-50 minutes until puffed and golden.
