Ingredients
  • 1 jar (16 oz) grape leaves, rinsed
  • 1 cup short-grain rice, rinsed
  • 1 large onion, finely chopped; 3 garlic cloves
  • ½ cup fresh parsley, mint, dill (chopped)
  • ¼ cup olive oil, juice of 2 lemons
  • 1 tsp allspice, ½ tsp cinnamon, salt & pepper
  • 1-2 tomatoes, sliced (for bottom of pot)
  • Optional: ½ cup cooked chickpeas
Instructions
  1. 1Mix rice with onion, herbs, spices, 2 tbsp oil, half the lemon juice, and ¼ cup water.
  2. 2Place a grape leaf vein-side up, add 1 tsp filling, fold sides and roll tightly.
  3. 3Line pot with tomato slices and extra leaves. Arrange rolls tightly. Add remaining oil, lemon juice, and enough water to cover.
  4. 4Weight down with a plate. Simmer on low 45 min until rice is tender. Cool slightly before serving.
