Vegetarian Stuffed Grape Leaves (Dolma Easy) — a healthy halal recipe with 260 calories and 5g protein per serving.
Ingredients
- 1 jar (16 oz) grape leaves, rinsed
- 1 cup short-grain rice, rinsed
- 1 large onion, finely chopped; 3 garlic cloves
- ½ cup fresh parsley, mint, dill (chopped)
- ¼ cup olive oil, juice of 2 lemons
- 1 tsp allspice, ½ tsp cinnamon, salt & pepper
- 1-2 tomatoes, sliced (for bottom of pot)
- Optional: ½ cup cooked chickpeas
Instructions
- 1Mix rice with onion, herbs, spices, 2 tbsp oil, half the lemon juice, and ¼ cup water.
- 2Place a grape leaf vein-side up, add 1 tsp filling, fold sides and roll tightly.
- 3Line pot with tomato slices and extra leaves. Arrange rolls tightly. Add remaining oil, lemon juice, and enough water to cover.
- 4Weight down with a plate. Simmer on low 45 min until rice is tender. Cool slightly before serving.
