Ingredients
- 1 large head green cabbage
- 1 cup cooked rice or quinoa
- 1 (15 oz) can lentils, drained
- 1 onion, 2 carrots, 3 garlic cloves (finely chopped)

- 2 tbsp olive oil, 1 tsp thyme, 1 tsp paprika, salt & pepper

Instructions
- 1Boil cabbage 8-10 min until leaves soften. Peel off 20 large leaves.
- 2Sauté onion, carrot, and garlic. Mix with lentils, rice, herbs, and spices.
- 3Place filling in each leaf, fold sides and roll. Arrange seam-down in a pot.
- 4Pour tomato sauce and broth over rolls. Cover and simmer 40-45 min until tender.
