Ingredients
- 1 lb fresh or frozen okra, trimmed
- 1 large onion, diced
- 4 garlic cloves, minced
- 1 (28 oz) can diced tomatoes
- 2 tbsp tomato paste
- 2 tsp cumin, 1 tsp coriander, ½ tsp paprika, salt & pepper
- 3 tbsp olive oil, fresh cilantro, lemon wedges
Instructions
- 1Heat oil in a pot. Sauté onion until soft. Add garlic and spices; cook 1 min.
- 2Stir in tomato paste, then add diced tomatoes and 1 cup water. Bring to simmer.
- 3Add okra and cook 25-30 min until tender, stirring gently occasionally.
- 4Finish with fresh cilantro and lemon juice. Serve with rice or flatbread.
