Ingredients
- 1 cup brown lentils, rinsed
- 1 cup basmati rice, rinsed
- 3-4 large onions, thinly sliced
- ¼-⅓ cup olive oil
- 2 tsp cumin, 1 tsp allspice (optional), salt & pepper
- Fresh parsley, plain yogurt or lemon for serving
Instructions
- 1Cook lentils in 3 cups water ~15-20 min until almost tender. Add rice and more water if needed; cook ~20 min until done.
- 2Meanwhile, heat oil and caramelize onions slowly over medium-low (~20-30 min) until deep golden and crispy.
- 3Mix half the onions into lentil-rice. Top with remaining onions, parsley, and yogurt.
