Ingredients
- 1 cup long-grain rice, rinsed
- ½ cup vermicelli noodles, broken
- 2 tbsp olive oil or ghee (halal)
- 2¼ cups vegetable broth or water
- ½ tsp salt, toasted pine nuts or almonds
- Fresh parsley for garnish
Instructions
- 1Heat oil in a pot. Toast vermicelli until golden brown (watch carefully).
- 2Add rice and stir 1-2 min to coat. Pour in hot broth and salt.
- 3Bring to boil, then reduce to low, cover, and cook 18-20 min until tender. Rest 5 min. Fluff and top with toasted nuts and parsley.
