Ingredients
- ¾ cup green lentils, rinsed
- 1 (15 oz) can chickpeas, drained
- 1 large onion, 2 celery stalks, 2 carrots (diced)
- 4 garlic cloves, 1 tbsp ginger
- 2 tsp ras el hanout or (cumin + turmeric + cinnamon + paprika)
- 1 (28 oz) can crushed tomatoes + 6 cups veg broth
- ¼ cup chopped cilantro & parsley, lemon wedges
- Optional: 2 tbsp rice or vermicelli
Instructions
- 1Sauté onion, celery, carrots 5-7 min. Add garlic, ginger, spices.
- 2Add tomatoes, lentils, broth. Simmer 30-35 min until lentils tender.
- 3Add chickpeas and pasta (if using); cook 8-10 min more. Stir in herbs. Serve with lemon.
