Ingredients
- 2 (15 oz) cans fava beans, drained
- 1 large onion, 3 garlic cloves, 1 carrot
- 1 (15 oz) can diced tomatoes
- 2 tsp cumin, 1 tsp coriander, salt & pepper

- Fresh parsley, cumin for garnish, pita bread
Instructions
- 1Heat oil and sauté onion and carrot 5-6 min. Add garlic and spices.
- 2Add tomatoes and fava beans with 2-3 cups water or broth. Simmer 15-20 min.
- 3Partially mash beans for creaminess. Stir in lemon juice. Garnish with parsley, extra cumin, and olive oil. Serve with pita.
