Ingredients
- 1 cup freekeh, rinsed
- 2 carrots, diced; 1 cup green peas
- 1 onion, diced; 2 garlic cloves
- 2 tbsp olive oil
- 1 tsp cumin, ½ tsp allspice, salt & pepper
- 2¼ cups vegetable broth
- Fresh parsley and mint
Instructions
- 1Heat oil and sauté onion 4 min. Add garlic, carrots, and spices; cook 2 min.
- 2Add freekeh and stir 1 min. Pour in broth and bring to boil.
- 3Reduce heat, add peas, cover and simmer 20-25 min until freekeh is tender.
- 4Fluff and garnish with fresh herbs.
