Ingredients
  • 1 cup freekeh, rinsed
  • 1 onion, 2 carrots, 1 zucchini, 1 cup cauliflower
  • 2 garlic cloves, 2 tbsp olive oil
  • 1 tsp cumin, ½ tsp allspice, ½ tsp cinnamon, salt & pepper
  • 2¼ cups vegetable broth
  • Fresh parsley and mint, toasted almonds
Instructions
  1. 1Heat oil and sauté onion 4 min. Add garlic, carrots, and spices; cook 2 min.
  2. 2Add freekeh and stir 1 min. Pour in broth, bring to boil.
  3. 3Reduce heat, add remaining vegetables, cover and simmer 20-25 min until freekeh is tender. Fluff and garnish with herbs and nuts.
