Ingredients
  • 2 medium beets, roasted or boiled and grated (about 1.5 cups)
  • 1 (15 oz) can chickpeas, drained
  • 1 small onion, 3 garlic cloves
  • ½ cup fresh parsley and cilantro
  • 2 tsp cumin, 1 tsp coriander, ½ tsp paprika
  • 4-5 tbsp chickpea flour, salt & pepper
  • Olive oil spray
Instructions
  1. 1Preheat oven to 400°F. Pulse chickpeas, onion, garlic, herbs, and spices in food processor to coarse texture.
  2. 2Mix in grated beets and chickpea flour until mixture holds together. Form into 12-16 patties.
  3. 3Place on lined baking sheet, spray with oil. Bake 25-30 min, flipping halfway until firm and crispy.
