Ingredients
- 2 tbsp olive oil
- 1 onion, diced; 2 carrots, diced; 2 celery, diced
- 3 garlic cloves, minced
- 1 zucchini, diced; 1 cup green beans, chopped
- 1 (15 oz) can diced tomatoes
- 1 (15 oz) can kidney or white beans, drained
- 6 cups vegetable broth
- 1 tsp Italian seasoning, bay leaf
- ½ cup small pasta
- Fresh basil
Instructions
- 1Sauté onion, carrots, celery 6 min. Add garlic and remaining vegetables.
- 2Add tomatoes, beans, broth, and seasonings. Simmer 20 min.
- 3Add pasta and cook 10-12 min. Stir in basil.
