Ingredients
  • 6-8 medium zucchini, hollowed
  • 1 cup fine bulgur, soaked
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1/2 cup fresh parsley and mint, chopped
  • 1 tsp dried mint, 1 tsp paprika, salt, black pepper
  • 1/4 cup olive oil, lemon juice
Instructions
  1. 1Mix soaked bulgur with onion, tomatoes, herbs, spices and half the olive oil.
  2. 2Stuff zucchini loosely. Arrange in a pot.
  3. 3Mix remaining oil, lemon juice and water to cover halfway. Place a plate on top.
  4. 4Simmer gently 40-45 min until zucchini and bulgur are tender. Serve warm or cold.
