Turkish Stuffed Zucchini with Bulgur and Herbs — a healthy halal vegetarian recipe with 260 calories and 8g protein per serving.
Ingredients
- 6-8 medium zucchini, hollowed
- 1 cup fine bulgur, soaked
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 1/2 cup fresh parsley and mint, chopped
- 1 tsp dried mint, 1 tsp paprika, salt, black pepper
- 1/4 cup olive oil, lemon juice
Instructions
- 1Mix soaked bulgur with onion, tomatoes, herbs, spices and half the olive oil.
- 2Stuff zucchini loosely. Arrange in a pot.
- 3Mix remaining oil, lemon juice and water to cover halfway. Place a plate on top.
- 4Simmer gently 40-45 min until zucchini and bulgur are tender. Serve warm or cold.
