Ingredients
- 1.5 lb (680g) fresh spinach, chopped
- 1/2 cup rice, rinsed
- 1 large onion, chopped
- 2 tbsp tomato paste optional
- 1/4 cup olive oil, salt, black pepper
- Juice of 1 lemon, fresh dill
Instructions
- 1Heat olive oil. Sauté onion until soft. Add tomato paste if using.
- 2Add rice and stir 2 min. Add spinach in batches until wilted.
- 3Add 1 cup water, salt and pepper. Simmer covered 20-25 min until rice is cooked.
- 4Finish with lemon juice and dill. Serve at room temperature.
