Turkish Spiced Lentil Köfte - No Meat — a healthy halal vegetarian recipe with 320 calories and 14g protein per serving.
Ingredients
- 1 cup red lentils
- 1/2 cup fine bulgur
- 1 large onion, finely chopped
- 3 tbsp tomato paste
- 1 tsp cumin, 1 tsp paprika, 1/2 tsp chili flakes
- 1/4 cup olive oil, fresh parsley, green onions
- Lettuce leaves for serving
Instructions
- 1Cook lentils in 3 cups water until soft and water is absorbed.
- 2Add bulgur to hot lentils, cover and let rest 10-15 min.
- 3Sauté onion in olive oil with tomato paste and spices. Mix into lentil-bulgur. Add herbs.
- 4Shape into oval patties. Serve on lettuce with fresh vegetables.
