Ingredients
- 1 cup red lentils, rinsed
- 1 large onion, chopped
- 1 carrot, chopped
- 2 tbsp tomato paste
- 1 tsp cumin, 1 tsp paprika, 1/2 tsp mint (dried)

- Lemon wedges, fresh mint or parsley
Instructions
- 1Heat oil in a pot. Sauté onion and carrot until soft. Add tomato paste and spices; cook 1 min.
- 2Add lentils and 5 cups water. Bring to boil then simmer 20-25 min until lentils break down.
- 3Blend until smooth. Adjust consistency with water.
- 4Serve hot with lemon wedges and fresh herbs.
