Turkish Lentil and Bulgur Köfte - Healthy — a healthy halal vegetarian recipe with 310 calories and 14g protein per serving.
Ingredients
- 1 cup red lentils
- 1/2 cup fine bulgur
- 1 large onion, finely chopped
- 3 tbsp tomato paste
- 1 tsp cumin, 1 tsp Aleppo pepper or paprika
- 1/4 cup olive oil, fresh parsley and green onions, salt
- Lettuce or cabbage leaves for serving
Instructions
- 1Cook lentils in 3 cups water until soft and water mostly absorbed. Add bulgur, cover and rest 10-15 min.
- 2Sauté onion in olive oil until golden. Add tomato paste and spices; cook 2 min.
- 3Mix into lentil-bulgur mixture with plenty of chopped herbs.
- 4Shape into small oval köfte. Serve on lettuce with fresh vegetables and yogurt if desired.
