Turkish Green Lentil and Bulgur Pilaf — a healthy halal vegetarian recipe with 340 calories and 14g protein per serving.
Ingredients
- 1 cup green lentils
- 1 cup coarse bulgur
- 1 large onion, chopped
- 2 tbsp tomato paste
- 1 tsp cumin, 1 tsp paprika
- 3 tbsp olive oil, salt, black pepper
- Fresh parsley
Instructions
- 1Cook lentils in 3 cups water until almost tender (15-20 min).
- 2Heat oil. Sauté onion until golden. Add tomato paste and spices.
- 3Add bulgur and cooked lentils with their liquid. Bring to boil.
- 4Cover and simmer 12-15 min until bulgur is tender. Rest 10 min. Fluff and garnish with parsley.
