Turkish Fried Zucchini Fritters (Mücver) — a healthy halal vegetarian recipe with 240 calories and 9g protein per serving.
Ingredients
- 3 medium zucchini, grated
- 2 large eggs
- 1/2 cup all-purpose flour
- 1 small onion, finely grated
- 3-4 green onions, chopped
- 1/4 cup fresh dill and parsley, chopped
- 1 tsp dried mint, 1/2 tsp black pepper, salt to taste
- 1/2 cup crumbled feta cheese (halal) optional
- Olive oil for shallow frying
Instructions
- 1Grate zucchini, sprinkle with salt and let drain 10 min. Squeeze out excess moisture thoroughly.
- 2In a bowl, mix zucchini with eggs, flour, onion, green onions, herbs, spices and feta (if using) into a thick batter.
- 3Heat olive oil in a skillet over medium heat. Drop spoonfuls of batter and flatten slightly.
- 4Fry 3-4 min per side until golden and crispy. Drain on paper towels. Serve warm with yogurt.
