Turkish Cold Yogurt Cucumber Soup (Cacık) — a healthy halal vegetarian recipe with 140 calories and 6g protein per serving.
Ingredients
- 2 cups plain yogurt (full fat or Greek)
- 2-3 cucumbers, grated and drained
- 2 garlic cloves, minced
- 2 tbsp fresh dill, chopped
- 2 tbsp olive oil, salt to taste
- 1/2 tsp dried mint, cold water as needed
Instructions
- 1Grate cucumbers, sprinkle with salt and let drain 10 min. Squeeze out excess water.
- 2In a bowl, whisk yogurt with garlic, olive oil, salt and a little cold water to desired consistency.
- 3Stir in grated cucumber and dill.
- 4Chill for at least 30 min. Drizzle with olive oil and sprinkle dried mint before serving.
