Ingredients
- 2 cups cooked large lima beans (or canned, drained)
- 1 small red onion, thinly sliced
- 2-3 tbsp olive oil
- Juice of 1 lemon
- 1/4 cup fresh dill and parsley, chopped
- 1 tsp sumac or dried mint, salt, black pepper
- Optional: chopped tomatoes or garlic
Instructions
- 1If using dried beans, soak and cook until tender. Cool completely.
- 2In a bowl, combine lima beans with sliced onion, herbs, olive oil, lemon juice and seasonings.
- 3Toss gently and let marinate 15-20 min.
- 4Serve cold as a meze with bread.
