Ingredients
- 2 cans chickpeas, drained
- 1 large onion, chopped
- 2 tbsp tomato paste
- 1 carrot, diced optional
- 1 tsp cumin, 1 tsp paprika, 1/2 tsp oregano or dried mint
- 3 tbsp olive oil, salt, black pepper, fresh parsley
Instructions
- 1Heat olive oil. Sauté onion until golden. Add tomato paste and spices; cook 2 min.
- 2Add chickpeas, carrot and 1.5 cups water.
- 3Simmer covered 25-30 min until sauce thickens.
- 4Garnish with parsley. Serve with rice or bread.
