Turkish Bulgur Pilaf with Tomato and Peppers — a healthy halal vegetarian recipe with 320 calories and 9g protein per serving.
Ingredients
- 1.5 cups coarse bulgur, rinsed
- 1 large onion, finely chopped
- 1 green bell pepper, diced
- 2 tomatoes, chopped
- 2 tbsp tomato paste
- 1 tsp cumin, 1 tsp paprika, 1/2 tsp black pepper
- 3 tbsp olive oil, salt to taste
- 3 cups hot vegetable broth or water, fresh parsley
Instructions
- 1Heat olive oil in a pot. Sauté onion until soft. Add green pepper and cook 3 min.
- 2Stir in tomato paste, tomatoes, and spices. Cook until tomatoes soften.
- 3Add bulgur and stir for 2 min to coat. Pour in hot broth and salt.
- 4Bring to boil, then reduce heat, cover and simmer 15-20 min until liquid is absorbed. Fluff and let rest 10 min. Garnish with parsley.
