Turkish Baked Rice Stuffed Tomatoes — a healthy halal vegetarian recipe with 320 calories and 6g protein per serving.
Ingredients
- 8 medium tomatoes
- 1 cup rice, rinsed
- 1 onion, finely chopped
- 1/4 cup pine nuts or currants
- 1/4 cup fresh parsley and mint
- 1 tsp allspice, 1/2 tsp cinnamon, salt, black pepper
- 1/3 cup olive oil
Instructions
- 1Cut tops off tomatoes and scoop out pulp. Chop pulp.
- 2Sauté onion in olive oil. Add rice, pine nuts, herbs, spices and chopped tomato pulp. Cook 5 min.
- 3Stuff tomatoes. Place in baking dish with a little water.
- 4Cover and bake at 375°F (190°C) for 40-45 min until rice is tender.
