Turkish Baked Rice Stuffed Tomatoes — a healthy halal vegetarian recipe with 320 calories and 6g protein per serving.

Ingredients
  • 8 medium tomatoes
  • 1 cup rice, rinsed
  • 1 onion, finely chopped
  • 1/4 cup pine nuts or currants
  • 1/4 cup fresh parsley and mint
  • 1 tsp allspice, 1/2 tsp cinnamon, salt, black pepper
  • 1/3 cup olive oil
Instructions
  1. 1Cut tops off tomatoes and scoop out pulp. Chop pulp.
  2. 2Sauté onion in olive oil. Add rice, pine nuts, herbs, spices and chopped tomato pulp. Cook 5 min.
  3. 3Stuff tomatoes. Place in baking dish with a little water.
  4. 4Cover and bake at 375°F (190°C) for 40-45 min until rice is tender.
