Ingredients
- 4 large eggs
- 2 cups cherry tomatoes, halved
- 2 cloves garlic, minced
- ¼ cup fresh basil leaves, chopped
- 2 tbsp olive oil
- ¼ cup crumbled feta or shredded mozzarella
- Salt, black pepper, and red pepper flakes to taste
Instructions
- 1Heat olive oil in a skillet over medium heat. Add garlic and tomatoes; cook 4-5 minutes until tomatoes soften.
- 2Season with salt, pepper, and red pepper flakes. Stir in half the basil.
- 3Make small wells in the tomato mixture and crack eggs into them.
