Ingredients
- 1 (14 oz) block firm tofu, cubed
- 4–5 heads baby bok choy, halved
- 4 cups vegetable broth
- 2–3 tbsp white miso paste
- 3 garlic cloves + 1 tbsp fresh ginger, minced
- 1 tbsp sesame oil
- 2 green onions, sliced
- Optional: shiitake mushrooms, chili flakes
Instructions
- 1Heat sesame oil in pot. Sauté ginger and garlic 1 min.
- 2Add broth and bring to gentle simmer. Whisk in miso until dissolved.
- 3Add tofu and bok choy; cook 5–7 min until bok choy is tender-crisp.
- 4Garnish with green onions. Serve hot.
