Spinach Artichoke Stuffed Shells (Vegetarian Healthy) — a healthy halal recipe with 420 calories and 22g protein per serving.
Ingredients
- 20-24 jumbo pasta shells, cooked al dente
- 1 (15 oz) can artichoke hearts, chopped
- 1 (10 oz) bag spinach, wilted and chopped
- 15 oz ricotta cheese (or cottage cheese), 1 cup shredded mozzarella (halal)
- ½ cup parmesan or nutritional yeast, 2 garlic cloves, Italian herbs, salt & pepper
- 2 cups marinara sauce
Instructions
- 1Preheat oven 375°F. Mix spinach, artichokes, ricotta, half mozzarella, garlic, and herbs.
- 2Spread marinara in baking dish. Stuff shells with mixture and arrange in dish. Top with remaining sauce and cheese.
- 3Cover and bake 25 min, then uncover 10 min until bubbly.
