Spinach and Ricotta Stuffed Pasta Shells — a healthy vegetarian halal recipe with 420 calories and 24g protein per serving.
Ingredients
- 20-24 jumbo pasta shells
- 15 oz ricotta cheese
- 10 oz fresh spinach, wilted and chopped
- 2 cups marinara sauce
- 1½ cups mozzarella, shredded
- 1 egg, 2 garlic cloves, nutmeg pinch, salt, pepper, fresh basil
Instructions
- 1Cook shells al dente. Mix ricotta, spinach, egg, garlic, nutmeg, salt, and pepper.
- 2Spread marinara in baking dish. Stuff shells with ricotta mixture and arrange in dish. Cover with remaining sauce and mozzarella.
- 3Cover and bake at 375°F for 25 minutes. Uncover and bake 10 more minutes until bubbly. Garnish with basil.
