Spinach and Ricotta Stuffed Pasta Shells — a healthy vegetarian halal recipe with 420 calories and 24g protein per serving.

Ingredients
  • 20-24 jumbo pasta shells
  • 15 oz ricotta cheese
  • 10 oz fresh spinach, wilted and chopped
  • 2 cups marinara sauce
  • 1½ cups mozzarella, shredded
  • 1 egg, 2 garlic cloves, nutmeg pinch, salt, pepper, fresh basil
Instructions
  1. 1Cook shells al dente. Mix ricotta, spinach, egg, garlic, nutmeg, salt, and pepper.
  2. 2Spread marinara in baking dish. Stuff shells with ricotta mixture and arrange in dish. Cover with remaining sauce and mozzarella.
  3. 3Cover and bake at 375°F for 25 minutes. Uncover and bake 10 more minutes until bubbly. Garnish with basil.
