Ingredients
- 1 cup red lentils, rinsed
- 8 cups fresh spinach, chopped
- 1 onion, 3 garlic cloves, 1-inch ginger
- 1 tomato, chopped
- 1 tsp cumin seeds, turmeric, coriander, garam masala
- ½ cup coconut milk or yogurt
- 2 tbsp ghee or oil, fresh cilantro
Instructions
- 1Simmer lentils in 3 cups water with turmeric until soft (15-20 minutes).
- 2Temper cumin seeds in ghee/oil. Add onion, ginger, garlic, and tomato; cook until soft. Add remaining spices.
