Ingredients
- 1 (12–14 oz) package silken tofu, cubed
- 4 cups mixed vegetables (napa cabbage, carrots, mushrooms, spinach)
- 4–5 cups vegetable broth
- 2 tbsp soy sauce or tamari
- 1 tbsp ginger, 3 garlic cloves, minced
- 1 tsp sesame oil
- Green onions and chili oil (optional)
Instructions
- 1Simmer broth with ginger, garlic, and soy sauce for 5 min.
- 2Add harder vegetables (carrots, mushrooms) and cook 5 min.
- 3Gently add silken tofu and leafy greens; simmer 3–5 min more.
- 4Finish with sesame oil and garnish. Serve immediately.
