Ingredients
- 2 tbsp olive oil
- 1 large onion, diced
- 1 red bell pepper, diced
- 4 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp chili powder (adjust to taste)
- 1 (28 oz) can crushed tomatoes
- 1 tsp salt
- ½ tsp black pepper
- 6 large eggs
- Fresh cilantro or parsley, chopped
- Optional: halal-certified feta cheese
Instructions
- 1 Heat olive oil in a large skillet over medium heat.
- 2 Sauté onion and bell pepper for 5-6 minutes until soft.
- 3 Add garlic, cumin, paprika, and chili powder; cook 1 minute.
- 4 Pour in crushed tomatoes, salt, and pepper. Simmer 8-10 minutes until thickened.
- 5 Make 6 wells in the sauce and crack an egg into each. Cover and cook 5-7 minutes until egg whites are set.
- 6 Garnish with fresh herbs and feta if desired. Serve with warm pita or whole wheat toast.
