Ingredients
  • 2 medium sweet potatoes, peeled and cubed
  • 1 bunch kale, stems removed and chopped
  • 1 (15-oz) can chickpeas, drained
  • ¼ cup pumpkin seeds or walnuts
  • ½ red onion, sliced
  • Optional: ⅓ cup halal feta
  • Dressing: ¼ cup olive oil, 2 tbsp balsamic or lemon juice, 1 tsp maple syrup, 1 garlic clove, salt, pepper, pinch cumin.
Instructions
