Roasted Sweet Potato Kale Salad Recipe — a healthy halal recipe with 360 calories and 12g protein per serving.
Ingredients
- 2 medium sweet potatoes, peeled and cubed
- 1 bunch kale, stems removed and chopped
- 1 (15-oz) can chickpeas, drained
- ¼ cup pumpkin seeds or walnuts
- ½ red onion, sliced
- Optional: ⅓ cup halal feta
- Dressing: ¼ cup olive oil, 2 tbsp balsamic or lemon juice, 1 tsp maple syrup, 1 garlic clove, salt, pepper, pinch cumin.
Instructions
- 1Preheat oven to 425°F. Toss sweet potatoes with 1 tbsp oil, salt & pepper. Roast 30-35 min until tender and caramelized.
- 2Massage kale with a bit of dressing to soften. Add chickpeas, onion, seeds, roasted sweet potato.
- 3Drizzle remaining dressing and toss.
