Ingredients
- 2 large sweet potatoes, cubed
- 2 (15-oz) cans chickpeas, drained
- 4 cups baby spinach or arugula
- ¼ cup pumpkin seeds, toasted
- ½ red onion, sliced
- Dressing: ¼ cup olive oil, 2 tbsp lemon juice, 1 tsp cumin, 1 garlic clove, salt & pepper.
Instructions

- 3Drizzle dressing and toss.
