Ingredients
- 2 large eggplants, cubed
- 2 (15-oz) cans chickpeas, drained
- 2 tbsp olive oil
- 1 tsp cumin and paprika
- 1 cup cherry tomatoes, halved

- Dressing: 3 tbsp olive oil, juice of 1 lemon, 1 garlic clove, pinch sumac, salt & pepper.
Instructions
- 1Preheat oven 425°F. Toss eggplant with oil and spices. Roast 30-35 min.
- 2Whisk dressing. Mix roasted eggplant with chickpeas, tomatoes, and herbs.
- 3Drizzle dressing and toss.
