Ingredients
- 2 (15 oz) cans chickpeas, drained, patted dry
- 2 tbsp olive oil, 1 tsp cumin, 1 tsp paprika, ½ tsp garlic powder, salt
- 4 large whole wheat or spinach wraps
- 1 cup tzatziki (Greek yogurt, cucumber, garlic, dill, lemon, salt)
- Fresh veggies: lettuce, tomato, cucumber, red onion, feta (optional)
Instructions
- 1Preheat oven to 425°F. Toss chickpeas with oil and spices. Roast 25 minutes, shaking halfway, until crispy.
- 2Make quick tzatziki by mixing strained yogurt with grated cucumber (squeezed dry), garlic, dill, lemon juice, and salt.
- 3Warm wraps. Spread tzatziki, add roasted chickpeas and fresh vegetables. Roll tightly and serve.
