Ingredients
- 1 large head cauliflower, riced
- 2 tbsp olive oil
- 2 large bunches parsley, finely chopped
- ½ cup fresh mint, chopped
- 4 tomatoes, finely diced
- 4 green onions, sliced
- Dressing: ¼ cup olive oil, juice of 3 lemons, salt & pepper.
Instructions
- 1Preheat oven 425°F. Toss riced cauliflower with oil. Roast 20-25 min until lightly golden. Cool.
- 2Combine cooled cauliflower with herbs, tomatoes, and onions.
- 3Add olive oil, lemon juice, salt & pepper. Toss thoroughly.
