Ingredients
- 1 large head cauliflower, cut into florets
- 2 tbsp olive oil
- 1 tsp cumin, ½ tsp paprika, salt & pepper
- 1 cup cherry tomatoes, halved
- ½ red onion, sliced
- ¼ cup fresh parsley
- Optional: chickpeas or arugula
- Tahini Dressing: ¼ cup tahini, juice of 1 lemon, 1 garlic clove, 2-4 tbsp water, salt.
Instructions
- 1Preheat oven 425°F. Toss cauliflower with oil & spices. Roast 25-30 min until golden.
- 2Whisk dressing (thin with water). Combine roasted cauliflower with tomatoes/onion/herbs. Drizzle tahini.
