Ingredients
- 1 large head cauliflower, riced (or 4 cups pre-riced)
- 2 tbsp olive oil
- 1 tsp cumin and paprika
- 1 cup cherry tomatoes, halved
- ½ cucumber, diced
- ¼ cup fresh parsley and mint
- ⅓ cup toasted pine nuts
- Dressing: 3 tbsp olive oil, juice of 1 lemon, 1 garlic clove, salt & pepper.
Instructions

- 2Whisk dressing. Mix roasted cauliflower rice with vegetables, herbs, and nuts.
- 3Drizzle dressing and toss. Serve warm or cooled.
