Ingredients
- 6-8 carrots, sliced
- 1½ cups cooked green lentils
- 1 red onion, sliced
- 3 tbsp olive oil, 1 tsp cumin, 1 tsp coriander, salt & pepper
- ¼ cup fresh parsley and mint, 2 tbsp lemon juice, 2 tbsp tahini (optional)
Instructions
- 1Preheat oven 425°F. Toss carrots and onion with 2 tbsp oil and spices. Roast 25-30 min.

- 3Drizzle with remaining oil, lemon juice, and herbs. Add tahini drizzle if desired. Serve warm.
