Ingredients
- 4 medium beets, peeled and cubed
- 4 medium carrots, peeled and sliced
- 2 tbsp olive oil
- 1 tsp cumin, salt & pepper
- 4 cups arugula or mixed greens
- ⅓ cup goat cheese or halal feta, crumbled
- ¼ cup pistachios, chopped
- Dressing: 3 tbsp olive oil, 2 tbsp balsamic or lemon juice, 1 tsp honey, salt & pepper.
Instructions
- 1Preheat oven 425°F. Toss beets and carrots with oil, cumin, salt & pepper. Roast 35-40 min.
- 2Whisk dressing. Place greens on plates, top with warm roasted vegetables, cheese, and pistachios. Drizzle dressing.
