Ingredients
  • 4 medium beets, peeled and cubed
  • 4 medium carrots, peeled and sliced
  • 2 tbsp olive oil
  • 1 tsp cumin, salt & pepper
  • 4 cups arugula or mixed greens
  • ⅓ cup goat cheese or halal feta, crumbled
  • ¼ cup pistachios, chopped
  • Dressing: 3 tbsp olive oil, 2 tbsp balsamic or lemon juice, 1 tsp honey, salt & pepper.
Instructions
