Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 2 tbsp olive oil
- 1 cup cherry tomatoes, halved
- ¼ cup toasted pine nuts or almonds
- ¼ cup fresh dill and parsley
- Dressing: ¼ cup olive oil, juice and zest of 1 lemon, 1 garlic clove, salt & pepper.
Instructions
- 1Cook quinoa in broth according to package. Cool.
- 2Preheat oven 425°F. Toss asparagus with 1 tbsp oil, salt & pepper. Roast 12-15 min.
- 3Mix quinoa with roasted asparagus, tomatoes, nuts, and herbs. Toss with dressing.
