Ingredients
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tbsp olive oil
  • 1 cup cherry tomatoes, halved
  • ¼ cup toasted pine nuts or almonds
  • ¼ cup fresh dill and parsley
  • Dressing: ¼ cup olive oil, juice and zest of 1 lemon, 1 garlic clove, salt & pepper.
Instructions

  2. 2Preheat oven 425°F. Toss asparagus with 1 tbsp oil, salt & pepper. Roast 12-15 min.
