Ingredients
- 4 large bell peppers, halved and seeded
- 1 cup quinoa, cooked
- 1 (15 oz) can black beans, drained
- 1 cup corn kernels, 1 tomato, 1 red onion (diced)
- 2 tsp cumin, 1 tsp chili powder, ½ tsp smoked paprika, salt & pepper
- 1 cup salsa, fresh cilantro, lime wedges, optional cheese
Instructions
- 1Preheat oven 400°F. Mix cooked quinoa, black beans, corn, tomato, onion, spices, and half the salsa.
- 2Stuff pepper halves generously. Place in baking dish.
- 3Top with remaining salsa. Cover and bake 30-35 min until peppers are tender.
- 4Garnish with cilantro and lime.
