Ingredients
- 1½ cups almond flour or gluten-free oat flour
- ¾ cup pumpkin puree
- 2 large eggs
- ⅓ cup maple syrup
- ¼ cup plain Greek yogurt or light cream cheese (for filling)
- 1 tsp pumpkin pie spice
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp vanilla
- Pinch of salt

Instructions
- 1Preheat oven to 375°F. Line muffin tin.
- 2Mix pumpkin, eggs, maple syrup, yogurt (reserve 2 tbsp for filling), vanilla, and dry ingredients until smooth.
- 3Fill muffin cups halfway. Add a small dollop of cream cheese in the center, then top with more batter. Swirl lightly.
- 4Sprinkle with pecans if using. Bake 18-24 minutes until golden. Cool before removing.
