Ingredients
  • 1 lb fresh spinach, chopped
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • ½ cup short-grain rice or vermicelli
  • 6 cups vegetable broth
  • Juice of 2–3 lemons (to taste)
  • 3 tbsp olive oil
  • 1 tsp cumin, salt & black pepper
  • Fresh cilantro or parsley
Instructions
  1. 1Heat olive oil in a pot. Sauté onion until soft, add garlic and cumin.
  2. 2Add broth and rice/vermicelli; simmer 15 min until rice is tender.
  3. 3Stir in chopped spinach and cook 5 min until wilted.
  4. 4Add lemon juice, salt, and pepper. Simmer 2–3 min more. Garnish with herbs. Serve hot.
