Ingredients
- 1 loaf day-old whole grain bread, cubed (about 8-10 slices)
- 6 large eggs
- 1 cup low-fat milk or unsweetened almond milk
- 1 cup plain Greek yogurt (for protein)
- 2 cups mixed berries (fresh or frozen: strawberries, blueberries, raspberries)
- 2 tbsp maple syrup or honey
- 1 tsp vanilla extract

Instructions
- 1 Preheat oven to 350°F (175°C). Grease a 9x13 baking dish.
- 2 Whisk eggs, milk, yogurt, maple syrup, vanilla, cinnamon, salt, and protein powder.
- 3 Place bread cubes in dish, scatter berries throughout. Pour egg mixture evenly over top. Press gently to soak.
- 4 Bake covered for 25 minutes, then uncovered 10-15 minutes until golden and set.
